Avocados, mushrooms and beets are ingredients you would expect to find in perhaps a salad, but what about in a craft cocktail? At Wine Down, it isn’t unusual to find these and other ingredients typically found on a plate – salt, bacon fat, carrots, milk and eggs – in a cocktail glass instead. “People need to get out of their comfort zone and try something new,” said Trevor Scovel, Wine Down’s beverage director. “We want to push the envelope by finding unusual ingredients, creating complex flavors and developing different types of drinks.” But, Scovel assures you won’t see kale in a cocktail anytime soon.
