Flavorful Fusion

Mention the word “taco,” and the mind conjures images of spicy, flavorful Tex-Mex dishes, but at Solbird Kitchen & Tap, owner Jerry Perez’s menu offerings blend his childhood love of street tacos with creative fusion inspiration. “I was intrigued by LA’s Chef Roy Choi’s famed Kogi Korean BBQ food truck,” he said. “The idea of blending Korean and Mexican cuisine resonated with me.” Perez’s Korean Fusion Taco debuted in his Sol Kitchen Food Truck in 2013, and became an instant best-seller, with beef slow-roasted in a marinade of garlic, sesame, ginger and gochujang – a savory, sweet, spicy, fermented sauce – and wrapped in a white corn tortilla.
