When most diners hear the word meatloaf, they immediately think comfort food and just like their mom use to make. But for Catablu’s Executive Chef Tony Valenza his Italian chicken meatloaf is not like anything your mom made. “Meatloaf is always a favorite because it is a comfort food, but ours is elevated far beyond the expected beef meatloaf glazed with ketchup and topped with bacon,” he said. Italian cooking is Valenza’s forte and served as the inspiration for his sophisticated chicken meatloaf made with ground fennel, dried apricots, sofrito peppers, onions and glazed with an agrodolce sauce, a traditional Italian sweet & sour sauce made by reducing the sour (vinegar) and sweet (sugar).
