DON’T MIND IF I MELD: Maybe you don’t think you know what fusion cuisine is. But chances are, you have had some fusion cuisine without even knowing it. The corned beef and cabbage that Irish Americans and friends of Irish Americans eat on Saint Patrick’s Day is, in fact, a fusion of Irish and Jewish cuisines. Fusion cuisine is what happens when a chef combines elements of unique (and, at times, seemingly incompatible) culinary traditions.
