DON’T MIND IF I MELD: Maybe you don’t think you know what fusion cuisine is. But chances are, you have had some fusion cuisine without even knowing it. The corned beef and cabbage that Irish Americans and friends of Irish Americans eat on Saint Patrick’s Day is, in fact, a fusion of Irish and Jewish cuisines. Fusion cuisine is what happens when a chef combines elements of unique (and, at times, seemingly incompatible) culinary traditions. For people who are familiar with those traditions, fusion cuisine can be a revelation. For people who are unfamiliar with those traditions, fusion cuisine is a dependable source of great new food to try. In our February issue, we explored examples of fusion cuisine that are available in Fort Wayne and environs.
