Signature Dish

BUENOS DIAS: Early last year, we asked Ophelia’s Restaurant to name one dish from their menu that they wished everyone could try, and they picked migas. The word may not be familiar to some of you. Migas means different things to different Spanish-speaking cultures. But Mexican migas is a traditional breakfast dish that starts with strips of stale tortilla fried in a pan. Most migas recipes start with some sort of stale bread. Scrambled eggs are added and, if you are Ophelia’s, you finish it off Tex-Mex style with cheese, black beans, avocado, green sauce and tots.
